Pitaya bowls, aka dragon fruit bowls make a great breakfast or after workout snack. They’re easy to make (under 5 minutes), and have tons of health benefits. They’re loaded with vitamin C, vitamin B2, iron, magnesium, they’re high in fiber, rich in antioxidants, and they’re organic.
You can get creative with how you make them. If you’re not a fan of pineapple or strawberry, or looking for something different, you can use just about any fruit or fruit combination. All the ingredients used can be found at Whole Foods.
- Almond Breeze, Unsweetened Almond Milk
- 1/2 Banana sliced
- Whole Foods Organic Lemon / Blueberry Granola
- 1 Pack Frozen Pitaya Plus
- Whole Foods Organic Tropical Fruit Mix (blueberries, strawberries, pineapple, and kiwi)
- Navitas Naturals Organic Maca Powder
- Brazil Nuts
- Organic Shredded Unsweetened Coconut
- Navitas Naturals Organic Chia Seeds
Line bowl with granola. I used Whole Foods organic lemon / blueberry, but you can use any kind, although I do recommend Whole Foods organic granola, they have a huge assortment (strawberry / vanilla, coconut / almond, cherry / vanilla, etc.)
In blender, puree 1 pack of Pitaya, 1/4 cup of almond milk, 1/2 cup of pineapples and strawberries, 1/2 teaspoon of maca powder, 1/2 teaspoon of shredded coconut, and 1/4 teaspoon of chia seeds. Puree until you have a thick texture.
Poor into bowl over granola.
Top with 1/2 sliced banana, granola, strawberries, blueberries, kiwis, Brazil nuts, shredded coconut, and chia seeds.
