In honor of National Ice Cream Day I thought I’d put a twist on the basic s’mores we all enjoyed as children. The other day when I came across SmashMellow’s Cinnamon Churro Marshmallows, I knew I had to replace the traditional marshmallows that I had been using. I found this Spicy Avocado Sandwich recipe on The Coveteaur, and my boyfriend and I decided to make it. You really can’t go wrong with eggs and Avocado–perfect day or night.  Also, if your having friends over for Sunday brunch, it’s easy to make and would go great with Mimosas.
