In honor of National Ice Cream Day I thought I’d put a twist on the basic s’mores we all enjoyed as children. The other day when I came across SmashMellow’s Cinnamon Churro Marshmallows, I knew I had to replace the traditional marshmallows that I had been using.
I must say that the finished product was not only delicious but it was also a more fancy approach to your basic s’mores. Instead of just sandwiching them between two graham crackers, I also decided to use some of my favorite Gelato to create a frozen treat. These s’mores are the perfect combo of chocolate, sugary toasted cinnamon marshmallow (that tastes just like a churro), vanilla bean gelato and graham crackers. They are a foolproof summertime dessert to serve at your next gathering.
Ingredients:
- 1 box of Honey Maid Graham Crackers
- 1 giant sized Hershey Chocolate bar
- 1 bag of SmashMellow Cinnamon Churro Marshmallows
- 1 pint of Vanilla Bean Talenti Gelato
(Makes about 10)
You’ll Also Need:
- Wax paper
- S’mores campfire sticks or chopsticks
- Access to a stovetop burner
Directions:
Place a sheet of wax paper on a large serving tray. Break the graham crackers in half so you have 10 squares evenly spaced out.
Place 1 single square of chocolate on top of each graham cracker.
Microwave for about 30 seconds. Take a spoon and check if chocolate has melted. If not, put it in microwave for 10 second intervals until chocolate is spreadable. (Be careful not to burn it). Spread evenly on each graham cracker.
Turn oven burner onto high. Place a marshmallow on end of the stick and hold over burner, rotating it so marshmallow gets evenly toasted. Immediately place on top of graham cracker and chocolate. Continue doing this for all 10.
Place chocolate side on marshmallow, gently pressing together.
Place in freezer for about 30-40 min, or until hardened.

Take gelato out of freezer and let sit until softened (about 10 minutes).
Take tray out of freezer, scoop one scoop of gelato on top of each s’mores. Then place another graham cracker on top. Gently press down so ice cream is spread evenly.
Put in the freezer for about 45 minutes
Serve and enjoy!
(Store in airtight container and keep in freezer up to 5 days).
